Cheesy Keto Zucchini Bread
Ingredients:
- 2 cups almond flour
- 1/4 cup coconut flour
- 1/4 cup grated Parmesan cheese
- 1/4 cup shredded mozzarella cheese
- 1 teaspoon baking powder
- 1/2 teaspoon salt
- 1/2 teaspoon garlic powder
- 1/4 teaspoon black pepper
- 3 medium zucchinis, grated and drained
- 4 large eggs
- 1/4 cup unsalted butter, melted
- 1/4 cup unsweetened almond milk
- 1/4 cup chopped fresh basil
- 1/4 cup chopped green onions
Instructions:
Preheat your oven to 350F 175C
Grease a 9x5-inch loaf pan and line it with parchment paper
In a large mixing bowl, combine almond flour, coconut flour, grated Parmesan cheese, shredded mozzarella cheese, baking powder, salt, garlic powder, and black pepper
Mix well
Add the grated and drained zucchinis to the dry ingredients
Stir until well combined
In a separate bowl, whisk the eggs, melted butter, and almond milk together
Pour the wet ingredients into the zucchini mixture and stir until a batter forms
Fold in the chopped basil and green onions into the batter
Transfer the batter to the prepared loaf pan and smooth the top
Bake in the preheated oven for 45-55 minutes or until the bread is golden brown and a toothpick inserted into the center comes out clean
Allow the bread to cool in the pan for 10 minutes, then remove it from the pan and let it cool completely on a wire rack
Once cooled, slice and serve
