Ingredients:

  • 2 ripe bananas
  • 2 large eggs
  • 1/4 cup almond butter
  • 1/4 cup coconut flour
  • 1/4 cup honey
  • 1 tsp vanilla extract
  • 1/2 tsp baking soda
  • 1/2 tsp cinnamon
  • Pinch of salt
  • Coconut oil for greasing the doughnut pan

Instructions:

Start by heating the oven to 350F 175C

Put the ripe bananas in a bowl and mash them until they are smooth

The bananas should already be mashed

Now add the eggs, almond butter, honey, and vanilla extract

Combine well by mixing

Mix the baking soda, cinnamon, and a pinch of salt with a whisk in a different bowl

Slowly add the dry ingredients to the wet ones while mixing them together

Keep doing this until a smooth batter forms

Coconut oil should be used to grease a doughnut pan

Fill up each doughnut mold about two thirds of the way to the top with batter

The doughnuts should be baked in a hot oven for 18 to 20 minutes, or until they are set and lightly golden

Donuts should be taken out of the oven and left to cool in the pan for a few minutes before being moved to a wire rack to finish cooling

Once it's cool, you can add a little extra honey to make it sweeter if you want to

Enjoy your banana bread doughnuts that are gluten-free and paleo-friendly!
