Healthy Ratatouille Stew
A healthy and easy ratatouille recipe prepared like a stew, packed with colorful vegetables and aromatic herbs. This delicious dish is not only satisfying but also nutritious.
Ingredients:
- 1 large eggplant, diced
- 2 zucchinis, sliced
- 1 bell pepper, chopped
- 1 onion, finely chopped
- 3 tomatoes, diced
- 3 cloves garlic, minced
- 2 tbsp olive oil
- 1 tsp dried thyme
- 1 tsp dried rosemary
- 1 tsp dried oregano
- 4 cups vegetable broth
- Salt and pepper to taste
- Fresh basil for garnish
Instructions:
Put olive oil in a big pot and heat it over medium-low heat
Put in the onion and garlic, and cook until the onion is soft
Place the bell pepper, eggplant, and zucchini in the pan
Cook for 5 minutes
Add the oregano, thyme, rosemary, and tomatoes and mix them in
Put in the vegetable broth and raise the heat
Add salt and pepper, then put the lid on top and cook for 20 to 25 minutes
When the vegetables are soft, serve the stew hot with fresh basil on top
