Low Carb Sausage, Mushroom, and Chicken Casserole
Ingredients:
- 1 lb chicken breasts, diced
- 1 lb sausage preferably sugar-free, sliced
- 8 oz mushrooms, sliced
- 1 cup spinach, chopped
- 1 cup heavy cream
- 1 cup chicken broth
- 1 cup shredded cheese cheddar or mozzarella
- 2 cloves garlic, minced
- 2 tbsp olive oil
- 1 tsp Italian seasoning
- Salt and pepper to taste
Instructions:
Before you start cooking, heat the oven to 375F 190C
Warm up the olive oil in a big pan over medium-low heat
Add the minced garlic and cook until it smells good
Toss the diced chicken breasts into the pan and cook them until all sides are browned
Take it out of the pan and set it aside
Put the sausage slices in the same pan and cook them until they turn brown
Put mushrooms slices in the pan and cook them until their juices come out
Put the cooked chicken back in the pan
Blend spinach into small pieces and add heavy cream, chicken broth, and Italian seasoning
Mix things together well
Let the flavors blend and the sauce get a little thicker by simmering the mixture for 5 to 7 minutes
Add pepper and salt to taste
Put the mixture in a casserole dish
Cover the whole thing with shredded cheese
Put it in an oven that is already hot and bake for 20 to 25 minutes, or until the cheese melts and bubbles
Enjoy while hot!
