Thai Sweet Potato and Cauliflower Lettuce Wraps
These Thai-inspired lettuce wraps are filled with flavorful roasted sweet potato and cauliflower, tossed in a tangy soy-maple glaze. Topped with crunchy peanuts and fresh cilantro, they make for a delicious and satisfying vegan meal.
Ingredients:
- 1 medium sweet potato, diced
- 1/2 head cauliflower, chopped into small florets
- 1 tablespoon olive oil
- 2 cloves garlic, minced
- 1 teaspoon grated ginger
- 1 red bell pepper, thinly sliced
- 1/4 cup soy sauce
- 2 tablespoons maple syrup
- Juice of 1 lime
- 1/4 cup chopped peanuts
- 1/4 cup chopped fresh cilantro
- 1 head iceberg or butter lettuce, leaves separated
Instructions:
Preheat oven to 400F 200C
Toss sweet potato and cauliflower with olive oil, garlic, and ginger
Spread on a baking sheet and roast for 20-25 minutes, until tender and slightly browned
In a small bowl, whisk together soy sauce, maple syrup, and lime juice
In a large skillet, heat the sauce over medium heat
Add roasted sweet potato, cauliflower, and bell pepper
Cook for 5 minutes, stirring occasionally, until heated through and coated in the sauce
Spoon the mixture into lettuce leaves
Top with chopped peanuts and cilantro
Serve immediately, and enjoy!
